Becki Holmes, MS, RDN



Becki Holmes is the Founder of Foodwit – a scientific and regulatory consulting agency serving the food, restaurant, life sciences, and e-commerce industries.  She has held scientific and regulatory leadership roles at Red Bull North America and Starbucks Coffee Company with accomplishments including deployment of compliance strategies for nutrition labeling, trans fat, sodium reduction, menu labeling, and caffeine initiatives.  Becki is an active member of the Academy of Nutrition and Dietetics and has served in a variety of elected and appointed positions within the Dietitians in Business & Communications practice group and the Academy's Legislative and Public Policy Committee.  In her spare time, Becki enjoys spending time with her husband and two kids in Portland, OR. 




Missy Schaaphok, RD
Chair Elect



Missy is the head global dietitian for Taco Bell Corp. spearheading nutrition strategy and product development. Within this role, she is responsible for sensible menu development, regulatory compliance, stakeholder engagement, animal welfare, and sustainability, working closely with executive, legal, brand marketing, and public relations teams on internal and external outreach. Prior to joining Taco Bell, she taught women and children essential culinary nutrition skills, and published a cookbook called WIC Tested, Dietitian Approved for the WIC Program.      

Terri Raymond, MA, RDN, CD, FAND
Past Chair





Terri has worked in dietetics and business for more than 30 years. Currently she owns and operates a consulting business, employing more than 30 registered dietitians, serving healthcare and business clients in the Pacific Northwest. Previously she worked in contract food service as President for a regional corporation of 750 employees with clients in five western states. Terri has been active in DBC for more than ten years. She has served on the DBC Executive Board for several years and served as the Academy Foundation’s 2014-15 Chair.


Jackie Schulz, MS, RD, CSP, LDN


Jackie Schulz is the Nutrition Lead for KraftHeinz North America.  She received her B.S. in Dietetics from the University of California, Davis and her M.S. in Clinical Nutrition from Rush University in Chicago.
Prior roles include sales, nutrition marketing, regulatory affairs, and product development.  As a Registered Dietitian with a background in pediatric nutrition, she is passionate about effectively communicating evidence-based nutrition information to help individuals and groups improve their quality of life.

Theresa Hedrick, MS, RD, LD

Theresa is a food and nutrition communications consultant and a private practice dietitian nutritionist. She is passionate about making nutrition fit within the constraints of the real world.
Theresa is the author of three published peer-reviewed scientific studies, and has written nutrition and technical articles for Food Product Design and GreerNow magazines. She has been featured as a nutrition expert in interviews with Senior Voice America, Spry Magazine, and Mom Talk Radio, among others. 

N. Elaine Farley-Zoucha, RD, LMNT
  Elaine is the owner and President of EZ Nutrition Consulting, PC & Associates, specializing in Food Service Systems, Geriatric Care, and Quality Management for long term care facilities.  As a national speaker on nutrition and culture change in long term care, she inspires her audience to lead and empower their staff  to enhance the dining experience for the clients they serve.

  Sarah Hendren, MS, RDN, LDN, CD
Marketing & Communications Chair




Sarah Hendren, MS, RDN, LD, CD, is the Nutrition & Quality Assurance Manager for Culver’s. She is responsible for executing the nutrition strategy and provides brand direction as part of Culver’s Menu Strategy Team. She works closely with marketing, public relations, legal and quality assurance, providing thought leadership and regulatory guidance to communicate Culver’s commitment to quality and where their food comes from. Sarah is actively engaged in shaping Culver’s sustainability and animal welfare positioning and holds a leadership role within the US Roundtable for Sustainable Beef.



Sonja Stetzler, MA, RDN, CPC
Education Chair
  Sonja is the president and founder of Effective Connecting, providing executive coaching and communications-centered training for mid-to senior level leaders within organizations. Sonja is a national speaker, and in her 30 year career has held positions in food service management, food industry sales, sales management, and quality assurance. She currently serves as an adjunct faculty member at Queens University of Charlotte. Sonja has been a member of DBC for over 20 years.

Deanne Brandstetter, MBA, RD, CDN FAND

Deanne Brandstetter, M.B.A., R.D. has over thirty years of experience in the food and nutrition business.   As Vice President of Nutrition & Wellness for Compass Group, North America, she leads a team that coordinates wellness programs for foodservice clients and develops innovative & award winning cross sector nutrition & wellness initiatives.
Deanne’s marketing background and passion for great food has fueled her goal of creatively translating medical and nutrition science into innovative exciting food concepts for Compass Group customers.
Jennifer E. Seyler, MS, RD, CPT
Sponsorship Chair

Seyler has nearly 15 years’ experience within the nutrition/fitness marketing and communications space. She has provided US and global counsel to 40+ brands, including Abbott Nutrition, Mars brands, Gatorade, and Clorox brands. Seyler currently serves as the immediate past president for the Illinois AND, and as a Board of Director member for the Chicago Food and Nutrition Network. She lives in Elmhurst with her husband and two children - Major (4) and Levi (3).

Nicole Arcilla,

Nicole received her bachelor’s in Nutritional Science at Cornell University and went on to complete her dietetic internship and master’s in Nutrition and Wellness at Benedictine University. Though she practices as a clinical dietitian, Nicole has various experiences from providing PR/media assistance with her state’s dietetic association, to working with dietitians in developing and marketing an original smartphone app, and to public policy with a nutrition advocacy organization in DC.

Tyler Rolling, MS, RD

Tyler graduated from Florida State University with  her B.S. in Nutrition Science. She completed her internship at Patton State Hospital and recently completed her masters degree from San Diego State University in Nutrition Science. Tyler works as a RD for Uplifting Health and Fitness, helping design their nutrition program. She also works in the Health Promotion department at SDSU as a Health Educator.
Tyler performs synchronized swimming.  @BTSnutrition.

Lara Felton, MBA, RDN

  Lara is a San Francisco-based Registered Dietitian with a Masters of Business Administration from Santa Clara University. She is Head of Content at ShopWell, a free mobile shopping app for healthy eating and nutrition. Lara leads the nutrition team, bringing her "everything in moderation" philosophy to the ShopWell community. Prior to joining ShopWell, she was part of the adult cystic fibrosis team at Stanford Health Care for over 6 years.  

Lily Chen, MS, RDN

Lily Chen is a Registered Dietitian (USA) and Accredited Practising Dietitian (Australia) who has extensive experience in teaching, clinical care, and management. She received her Bachelor of Science from New York University and Master of Science from University at Buffalo, State University of New York. Besides English, she is fluent in Chinese Mandarin, Taiwanese, and Spanish.
Shu-Feng Tsao
Student Member
Shu-Feng is a graduate student at University of Connecticut where she is pursuing a master in Business Analytics and Project Management. Prior to attending UConn, she graduated from University of Kentucky with a master degree in Nutrition and Food Systems. She will start her dietetic internship at UK in January, 2019.
